Baked Apples (5 Points+)

Ingredients

1/3 cup apple juice or cider
Dash ground cinnamon
2 small red baking apples
2 tbsp pecans or walnuts, coarsley chopped
2 tbsp brown sugar
Dash ground cinnamon
Vanilla low fat frozen yogurt, optional


Directions:

1. Preheat oven to 350° F.

2. In a small bowl combine apple juice and 1 dash cinnamon. Divide the mixture between two
6 oz custard cups. Core apples; remove peel from the top of each apple. Place apples into custard cups.

3. Place the cups in a shallow baking pan. In another small bowl combine pecans, brown sugar and the other dash of cinnamon. Sprinkle over apples.

4. Place in oven and bake covered 30 to 40 minutes or until apples are tender.
Serve with frozen yogurt if desired.

Yield: 2 Servings Serving Size = 1 Apple
