Italian Chicken Sausage and Veggie Skewers (5 Points+)

  • Heat outdoor grill to medium-high (or grill pan over medium-high heat).
  • Skewer 2 pieces of sausage, pepper, onion and tomatoes on each of 8 skewers (if using wooden skewers, make sure to soak them for 20 minutes first to prevent charring).
  • Lightly coat skewers with cooking spray and sprinkle all over with 1/2 teaspoon each salt and pepper. Grill skewers, turning once, until lightly charred and vegetables are tender, about 12 to 15 minutes. Remove to a serving platter.
  • In a small cup, combine oil, vinegar, garlic and remaining 1/4 teaspoon each salt and pepper; brush dressing evenly over plated skewers and sprinkle with basil. Yields 2 skewers per serving.

Notes

  • The skewers can be assembled and refrigerated several hours before cooking.
