Italian Chicken Sausage and Veggie Skewers (5 Points+)
Ingredients
| | 12 oz cooked chicken sausage(s), spicy Italian-variety, cut diagonally in 16 pieces |
| | 1 large yellow pepper(s), cut into 16 pieces |
| | 1 small uncooked red onion(s), cut into 16 thin wedges |
| | 16 medium fresh cherry tomato(es) |
| | 3 spray(s) cooking spray |
| | 3/4 tsp table salt, divided (or less to taste) |
| | 3/4 tsp black pepper, freshly ground, divided (or less to taste) |
| | 1 Tbsp olive oil, extra-virgin |
| | 1 tsp balsamic vinegar |
| | 1/2 tsp minced garlic, finely chopped |
| | 1/4 cup(s) basil, torn |
Instructions
- Heat outdoor grill to medium-high (or grill pan over medium-high heat).
- Skewer 2 pieces of sausage, pepper, onion and tomatoes on each of 8 skewers (if using wooden skewers, make sure to soak them for 20 minutes first to prevent charring).
- Lightly coat skewers with cooking spray and sprinkle all over with 1/2 teaspoon each salt and pepper. Grill skewers, turning once, until lightly charred and vegetables are tender, about 12 to 15 minutes. Remove to a serving platter.
- In a small cup, combine oil, vinegar, garlic and remaining 1/4 teaspoon each salt and pepper; brush dressing evenly over plated skewers and sprinkle with basil. Yields 2 skewers per serving.
Notes
- The skewers can be assembled and refrigerated several hours before cooking.
