Meatless Breakfast Casserole (5 Points+)

Ingredients

1 Green bell pepper, chopped
1 Red bell pepper, chopped
1 Small onion, chopped
2 cups cholesterol free egg substitute
1 cup skim milk
3/4 cup 2% shredded cheddar cheese
1 tsp Italian seasoning
1/4 tsp black pepper
4 slices whole wheat bread, torn

Directions:

1. Preheat oven to 350° F.

2. Place vegetables in a medium nonstick skillet sprayed with cooking spray over medium high
heat and cook 4 minutes or until crisp tender, stirring occasionally. Place in a large bowl.
Add egg product, milk, cheese and seasonings; mix well.

3. Place the bread in a 2 quart size casserole sprayed with cooking spray and top with egg
product mixture. Bake 45 to 50 minutes or until knife inserted in center comes out clean.


Yield: 4 Servings
Serving Size: 1/4 of recipe.
